Unless you have a specific medical condition like diabetes and your doctor says “no potatoes, Susan,” you probably don’t need to cut them out. Our ancestors weren’t wrong to love them.
Potatoes are loaded with vitamin C, potassium (more than a banana!), and B6. They are a whole food, not a processed monstrosity.
The problem is what we do to them. We drown them in cheese, fry them in rancid oil, and cover them in bacon bits that are basically sawdust and regret. Keep it simple, and the potato is your friend.
The Final Verdict
So, are potatoes high carb? Yes. Absolutely. No hiding that. But is that a bad thing? Only if you treat them like a villain instead of a tool.
Carbohydrates are the preferred fuel for your brain and muscles. Unless you’re training for a keto competition or your doctor specifically told you to avoid them, you don’t need to live in fear of a Yukon Gold.
So go ahead. Eat the potato. Boil it, cool it, eat it with some butter. Just maybe don’t eat the entire family-size bag of chips in one sitting. Unless it’s a very sad day. In that case, I won’t tell.
