Salt the steak generously. Like, aggressively. Use flaky salt, kosher salt, or even sea salt. Don’t be shy—most of it falls off anyway. Salt draws out moisture, then the steak reabsorbs it, seasoning from the inside out. Magic? Pretty much.
Pat it dry with paper towels. Really dry. Moisture is the enemy of a good sear. A wet steak steams. A dry steak gets that gorgeous, crusty brown crust. You want crust, right? Who doesn’t want crust?
