Fully Cooked Ham Time

Fully Cooked Ham Time

Back to my story. I had one hour, a four-pound ham, and a stubborn oven. I set it to 325°F, covered it in foil, and prayed. After thirty minutes, I peeked. Still cold. After forty-five, I stabbed it with a thermometer: 120°F. I was panicking.

I did what any rational person does: I cranked the oven to 375°F and removed the foil. In truth, I was chasing a glaze of brown sugar and bourbon that I’d slathered on top. The high heat did two things: it burned the sugar (charred edges, anyone?) and it finally pushed the ham to 140°F.

Dinner was saved, but my ego was bruised. I learned that time is relative when dealing with a dense, pre-cooked log of pork. The package told me 30 minutes. The reality was 65 minutes. Classic.

What the Pros Don’t Tell You

Patience is the only ingredient you’re missing. A fully cooked ham is already cooked. You’re not killing bacteria; you’re reviving a sleeping giant. Treat it like a lazy guest: gentle, steady heat, with a final blast of charisma.

Here’s a rule I now live by: double the expected time. If the package says 12 minutes per pound, budget 20. If your oven is full of other dishes (like I always have), budget 25. No one ever complains about a ham that’s done early. They complain when it’s cold in the middle.

Also, rest it. Let it sit for 15 minutes under foil after it comes out. The internal temperature will climb another 5-10 degrees. Seriously, that residual heat is your friend. It saves you from cooking it dry.
