First, you must resist the urge to pick the flower too early. A sunflower that looks beautiful in a vase is not ready to give you snacks. You need the dramatic, plant-level meltdown.
The back of the flower head, the disc, will turn from green to a sad, droopy yellow-brown. The tiny yellow petals will wither and fall off. This is nature’s signal that the party is almost over and the seeds are ready.
The Bird Test
Watch the birds. If finches start hovering like tiny, feathered food critics, your seeds are prime. They know exactly when the buffet opens. If you wait too long, they’ll leave you nothing but empty hulls and bird chirps of pure delight.
