Think of it this way: celiac testing is like a crime scene investigation. Gluten is the suspect. If you kick gluten out of your diet, the crime scene gets cleaned up, and the evidence disappears. Your body heals, and the tests show nothing. You’ll get a false negative, and we don’t want that!
So, for the love of bagels, keep eating your usual amount of gluten for at least six to eight weeks before testing. Yes, you might feel bloaty. I promise it’s temporary, and it’s for a good cause!
