When you finally close the oven door, the inside of the turkey becomes a steam room. Butter melts down the sides, herbs swim around, and that cavity gets transformed. It goes from being a cold, scary tunnel to a hot, juicy heart of flavor. You can almost hear it sighing in contentment.

Two hours later, you open the door. The heat hits your face like a wall. You look at the turkey, golden and crisp on the outside. But you know what’s inside. You remember the knuckle scraping, the wet paper bags, and the stuffing debate. You feel a weird sense of pride. You conquered the void.

As you carve into it, steam rises. You scoop out the stuffing first—the best part, the only part that saw the true inside. You serve it, and everyone oohs and aahs. They don't know about the spelunking. They don't know about the “Downward Bird.” They just know it’s good. And you sit back, smile, and never, ever mention the cold sock. That’s between you and the turkey.
