Here’s where it gets weird. The Philippines has a dish also called menudo. But it’s totally different. It’s a pork and liver stew with tomato sauce and raisins. No tripe. No hominy.
This is a case of convergent food evolution. Spanish colonists brought the name to the Philippines, but the locals created their own version.
So, one name. Two completely different foods. Confusing? Yes. Fun? Absolutely. Never order Filipino menudo in Mexico. You will be very disappointed.
