If you’re transporting a pie to a party, let it cool completely first. Wrapping a warm pie turns it into a sauna for mold.
Use a pie carrier if you own one—they’re clunky but heroic. Or just place the pie plate in a large bowl and cover it with a clean tea towel. Function meets charm.
And whatever you do, don’t stack anything on top of your pie. The lattice work is not a load-bearing structure.
What About Glass vs. Metal Pans?
Glass pie dishes are actually best for storage. They retain cold better and don’t react with acidic apples. Metal pans can give a slight metallic taste after a day or two.
If you’re using a disposable tin pan, transfer leftovers to a glass dish before refrigerating. Your taste buds will detect the upgrade.
